Easy Buttery Lemon Salmon

Butter, lemon and salmon melt together into a savory melt in your mouth dish in this recipe. Make sure the salmon is fully defrosted or the salmon may taste fishy. If you forget to defrost the salmon you can cook the salmon completely frozen in the oven for 10 minutes at 350 degrees. After this you can follow the recipe as described. The flavor and texture won’t be optimum, but it does the trick in a pinch!

Ingredients:

4 Salmon Filets

½ TBSP Coconut oil

Salt

Black Pepper

Garlic Powder

3 TBSP Butter

½ a lemon

Fresh basil (or dried)

 

Directions:

  1. Melt enough coconut oil to cover the bottom of the pan over medium heat. Place the salmon filets skin down in the pan.
  2. Sprinkle with salt, pepper and garlic powder. Cook for 3 minutes.
  3. Flip the filets and add salt, pepper and garlic powder. Cook 3-5 minutes.
  4. Add butter to the pan. Once melted turn the heat to low and add dried basil if not using fresh. Tilt the pan so the butter runs to one side. While holding the tilted pan spoon the butter over the filets. Continue for 1-2 minutes.
  5. Turn off the heat and cover each filet generously with fresh lemon juice. Top with fresh chopped basil (or, dried if fresh is not available) and serve immediately.
