Cooked bell peppers and onions: heat 2 tbsps. coconut oil in a skillet. Chop the onions and bell peppers or thinly slice. Place the onions and bell peppers in the oil and cook over medium heat for about 10-15 minutes.

How should I prepare this for my children?

My little ones find this dish too spicy for their liking. I put all the ingredients into the slow cooker, except for the chipotle peppers. Then, several hours into cooking (when the meat is easily shredded) I put some aside for my children. Then, I add chopped chipotle peppers and cook for another 30 minutes or more. Another option is to buy chipotle flavored tabasco sauce and add this to the meat after serving.

Ingredients:

3-4 lbs chuck roast or brisket

½ cup beef broth

2-3 chipotle peppers with about 3 tsp of the sauce

5 cloves of garlic

2 tbsp apple cider vinegar

2 tbsp lime juice

1 tbsp dried oregano

2 tsp cumin

2 tsp sea salt

1 tsp black pepper

½ tsp ground cloves

2 bay leaves

Directions:

1. Place the beef in the slow cooker.

2. Add all the ingredients except the beef and bay leaves to a blender. Blend until smooth.

3. Pour the mixture over the beef. Add the bay leaves.

4. Cook for 6-8 hours on low or 4-6 on high.
